Cauliflower is a vitamin powerhouse! One serving delivers nearly 80% of your recommended daily Vitamin C. It is also a good source of protein, fiber, vitamins K and B6, as well as magnesium, niacin, potassium, and more. If you want to get your kids to eat cauliflower, have them grow Graffiti (a vivid purple variety that they will want to eat fresh-off-the-“vine”). Cheddar, a bright orange option, is much milder than the standard white variety. But, if you really want to turn kids on to growing (and eating) cauliflower – try Romanesco, which looks like a lime-green spaceship growing right out of the ground! It tastes very much like broccoli and is a kid-pleasing favorite!

Cauliflower needs room to grow, give it at least a 2’ x 2’ space in an area that gets at least 6 hours of sun per day. It can also be grown very successfully in large pots. It is easier to start by transplant than by seed.
